Shmurah means “watched” indicating that from the moment the harvesting began this matzah has been watched and safe from any contact with water. This hand-made matzah is round, shaped and kneaded with love similar to the Matzot which were baked by the Children of Israel as they left Egypt. It is thus fitting to use Shmurah matzah for the Matzot on the Seder plate.
